It was the <strong>main source of proteins<\/strong> for incas , mayas and aztecs. Today Amaranth is one of the most <strong>rich and nutritious<\/strong> foods in Mexico. It\u2019s considered one of the favorite products for athletes, astronauts, vegetarians and many women (in menstruation periods, pregnancy and osteoporosis) because it has twice the proteins of rice.<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<h4>Properties<\/h4>\n<p>Amaranth, also known as Kiwincha, its a yellowish grain, thiner than rice and with a similar texture to couscous. It\u2019s considered as a <b>pseudo-cereal<\/b> due to it\u2019s properties and the way to cook it, really similar to <a href=\"https:\/\/shawellness.com\/shamagazine\/en\/cereals-properties-benefits-and-recipes-2\/\" target=\"_blank\" rel=\"noopener noreferrer\">cereals<\/a>, although it is the high level of proteins (16%) and its lack of gluten what differences it of them.<\/p>\n<p>&nbsp;<\/p>\n<p>It\u2019s also characterized by:<\/p>\n<ul>\n<li><u>Low in fats <\/u>\u2013 It\u2019s a product used in many diets as an ingredient to make mayonnaise and light dressings.<\/li>\n<\/ul>\n<ul>\n<li><u>Contains essential amino acids <\/u>\u2013 It has high levels of methionine and lysine, an amino acid that helps <a href=\"https:\/\/shawellness.com\/shamagazine\/en\/vegetables-that-nourish-your-brain\/\" target=\"_blank\" rel=\"noopener noreferrer\">memory<\/a>, intelligence and learning.<\/li>\n<\/ul>\n<ul>\n<li><u>Healthy source of carbohydrates<\/u> \u2013 It provides <a href=\"https:\/\/shawellness.com\/shamagazine\/en\/how-to-overcome-the-lack-of-energy\/\" target=\"_blank\" rel=\"noopener noreferrer\">energy<\/a> without gaining weight. It helps prevent and fight against some diseases.<\/p>\n<ul>\n<li>It helps prevents <strong>cancer of colon<\/strong>.<\/li>\n<li>Combats <strong>osteoporosis <\/strong>and<strong> anaemia<\/strong>.<\/li>\n<li>It&#8217;s ghighly recommended for <strong>diabetics<\/strong> and people with <strong>cholesterol problems<\/strong> because it helps stabilize the glucose levels and and blood fats.<\/li>\n<li>It&#8217;s desirable in <strong>obesity<\/strong> patients, <strong>arterial hypertension<\/strong> and <strong>constipation<\/strong>, due to high levels of fiber.<\/li>\n<li>Helps people who suffer <strong>liver diseases<\/strong> and <strong>kidney failure<\/strong> because it contains essential amino acids.<\/li>\n<li>Its consumption is recommended in people with <strong>autism<\/strong>.<\/li>\n<li>Has curative properties and its leaves are effective for <strong>diarrhea<\/strong>.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>It is used both for salty and sweet cuisine.
