Try it, you&#8217;ll fall in love!<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>Whole wheat pastry flour &#8211; 1 cup<\/li>\n<li><strong>Chestnut flour \u2013 1 cup<\/strong><\/li>\n<li>Baking powder &#8211; 1 tbsp<\/li>\n<li>Baking soda &#8211; 1 tsp<\/li>\n<li><strong>Cinnamon &#8211; 2 tsps<\/strong><\/li>\n<li>Nutmeg &#8211; \u00bd tsp<\/li>\n<li>All-spice &#8211; \u00bd tsp<\/li>\n<li>Ground <a href=\"https:\/\/shawellness.com\/shamagazine\/en\/ginger-benefits\/\" target=\"_blank\" rel=\"noopener noreferrer\">Ginger <\/a>\u2013 1 tsp<\/li>\n<li><strong>Coconut oil &#8211; \u00bd cup<\/strong><\/li>\n<li>Maple syrup &#8211; 2\/3 cup<\/li>\n<li><strong>Soy milk &#8211; 2\/3 cup<\/strong><\/li>\n<li>Vanilla extract &#8211; 2 tsps<\/li>\n<li><strong>Sea salt &#8211; \u00bd tsp<\/strong><\/li>\n<li>Grated carrot &#8211; 2 cups<\/li>\n<li>Pineapple, crushed &#8211; \u00bd cup<\/li>\n<li>Walnuts, toasted and chopped \u2013 1 cup<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h4><strong>Preparation<\/strong><strong> <\/strong><\/h4>\n<ul>\n<li>Preheat the oven to<strong> 350\u00baC <\/strong>.<\/li>\n<li>Sift flour, baking powder, baking soda, spices and salt into a bowl.<\/li>\n<li><strong>Mix oil, maple syrup, soy milk, and vanilla extract in a bowl with a whisk.<\/strong><\/li>\n<li>Combine the wet and dry ingredients to form a batter.<\/li>\n<li>Add the walnuts, carrots and pineapple and mix gently.<\/li>\n<li>Pour the batter into 2 oiled cake tins and bake for <strong>25-30 minutes<\/strong>.
