Es una receta con at\u00fan muy saludable y muy sabrosa que puede utilizarse como plato para la comida de Navidad o en men\u00fas de celebraciones el d\u00eda de A\u00f1o Nuevo.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<h5 style=\"text-align: justify;\"><strong>Propiedades del at\u00fan<\/strong><\/h5>\n<p style=\"text-align: justify;\"><strong>El <a href=\"http:\/\/alimentos.org.es\/atun\" target=\"_blank\" rel=\"noopener noreferrer\">at\u00fan<\/a> es un pescado azul con muchas prote\u00ednas y Omega 3<\/strong> que, aunque no debe tomarse de forma demasiado frecuente por su alto contenido en mercurio, s\u00ed que podemos a\u00f1adirlo ocasionalmente en nuestra dieta y da muy buen resultado en las ocasiones especiales. Tambi\u00e9n tiene un elevado contenido en calcio y aporta vitaminas importantes como la Vitamina A o la Vitamina D.<\/p>\n<p style=\"text-align: justify;\">Adem\u00e1s, est\u00e1 demostrado que <strong>el at\u00fan es un pescado que ayuda a absorber la grasa corporal<\/strong> por lo que resulta muy \u00fatil para ayudarnos a adelgazar.<\/p>\n<h5 style=\"text-align: justify;\"><strong>\u00bfQu\u00e9 es el tataki de at\u00fan?<\/strong><\/h5>\n<p style=\"text-align: justify;\">El <a href=\"http:\/\/es.wikipedia.org\/wiki\/Tataki\" target=\"_blank\" rel=\"noopener noreferrer\">tataki<\/a> (tambi\u00e9n llamado tosa-mi) es una forma de preparar el pescado tradicional de la cocina japonesa y consiste en filetear el pescado en trozos de un grosor considerable para marcar por las cuatro caras con una plancha caliente, dejando su interior pr\u00e1cticamente crudo. En ocasiones, para preparar tataki, el pescado se puede marinar previamente (por ejemplo, usando una mezcla de vinagre con un poco de jengibre rallado).<\/p>\n<p><strong>Receta de tataki de at\u00fan con risotto de setas y reducci\u00f3n de mirim <\/strong><\/p>\n<p style=\"text-align: justify;\">El tataki de at\u00fan es el plato estrella de muchos restaurantes y ha de servirse reci\u00e9n hecho, nada m\u00e1s sacarlo de la plancha, para que no pierda su sabor y textura.<\/p>\n<p style=\"text-align: justify;\">Puede acompa\u00f1arse con muchas guarniciones como verduras o legumbres pero combina especialmente bien con alg\u00fan risotto al gusto. Hoy os proponemos el rissotto de setas pero otro d\u00eda compartiremos otras opciones como el risotto de calabaza, un ingrediente muy oto\u00f1al.<\/p>\n<div style=\"text-align: center;\"><\/div>\n<h6 style=\"text-align: justify;\">Ingredientes (para 4 \u00f3 5 personas aproximadamente)<\/h6>\n<ul>\n<li>1kg de at\u00fan toro<\/li>\n<li>200 gr de setas variadas<\/li>\n<li>250 gr de arroz integral<\/li>\n<li>100 ml de nata de soja<\/li>\n<li>1 cucharadita de azafr\u00e1n<\/li>\n<li>Cantidad suficiente de agua de setas (si no se dispone, puede usarse agua normal)<\/li>\n<li>50 ml de aceite de oliva virgen org\u00e1nico<\/li>\n<li>100 ml de mirim<\/li>\n<li>5 gr de sirope de arroz<\/li>\n<li>25 gr de cebollino<\/li>\n<li>25 gr de perifollo<\/li>\n<\/ul>\n<h6 style=\"text-align: justify;\">Preparaci\u00f3n del tataki de at\u00fan<\/h6>\n<p style=\"text-align: justify;\">1. Para el <strong>tataki de at\u00fan<\/strong>, limpiamos el at\u00fan toro de la piel y posibles nervios. Cortamos el lomo de at\u00fan en tiras con un grosor considerable de unos 2 cent\u00edmetros y  reservamos hasta que vayamos a servir el plato, que ser\u00e1 cuando lo marquemos con la plancha por las cuatro caras.<\/p>\n<p style=\"text-align: justify;\">2. Para preparar el <strong>risotto de setas<\/strong>, se cuece el arroz integral durante 30 minutos y, cuando est\u00e9 listo,  se pone en la sart\u00e9n junto con las setas variadas  previamente cocidas, la nata, el azafr\u00e1n y el agua de setas que sea necesaria. Se deja cocinar para que se homogeinicen  los sabores y coja la textura de rissotto. Cuando est\u00e9 listo, se a\u00f1aden el cebollino y el perifollo para decorar y dar sabor.<\/p>\n<p style=\"text-align: justify;\">3.
