Adem\u00e1s, el marisco tiene muy pocas calor\u00edas, aunque hay que moderar su consumo para evitar problemas como el incremento de los niveles de \u00e1cido \u00farico.<\/p>\n<p style=\"text-align: justify;\"><strong style=\"font-size: 0.83em;\">Ingredientes para esta receta sana (10 personas aproximadamente)<\/strong><\/p>\n<h6 style=\"text-align: justify;\">Ingredientes para el carpaccio:<\/h6>\n<ul>\n<li>Carabineros -700 gr<\/li>\n<\/ul>\n<h6 style=\"text-align: justify;\">Ingredientes para la ensalada de frutos secos:<\/h6>\n<ul>\n<li>Can\u00f3nigos    600 gr.<\/li>\n<li>R\u00facula    600 gr.<\/li>\n<li>Almendras    50 gr.<\/li>\n<li>Avellanas    50 gr.<\/li>\n<li>Nueces    50 gr.<\/li>\n<li>Pipas de girasol    50 gr.<\/li>\n<li>Pipas de calabaza    50 gr.<\/li>\n<li>Pistachos    50 gr.<\/li>\n<li>Macadamia    50 gr.<\/li>\n<\/ul>\n<h6 style=\"text-align: justify;\">Ingredientes para la vinagreta de bergamota:<\/h6>\n<ul>\n<li>Aceite de oliva virgen extra ecol\u00f3gico    100 c.c.<\/li>\n<li>Vinagre de M\u00f3dena  100 c.c.<\/li>\n<li>Bergamota    10 gr.<\/li>\n<li>Naranja    5 gr.<\/li>\n<li>Lima    5 gr.<\/li>\n<li>Lim\u00f3n    5 gr.<\/li>\n<\/ul>\n<h5 style=\"text-align: justify;\"><strong>Preparaci\u00f3n del carpaccio de carabineros paso a paso<\/strong><\/h5>\n<p style=\"text-align: justify;\">1.- Pelar los carabineros y juntarlos todos, filmados por debajo y por arriba, y chafar los carabineros hasta que quede un c\u00edrculo de unos 20 cm. Congelar. Cuando est\u00e9 congelado, quitamos el rollo de film y cortamos en lonchas finas a modo de carpaccio para servir a temperatura ambiente.<br \/>\n2.- Para preparar la ensalada, primero se tuestan en el horno todos los frutos secos, se enfr\u00edan y pican ligeramente. Juntamos la r\u00facula con los can\u00f3ningos y a\u00f1adimos los frutos secos.<br \/>\n3.- Para sazonar la ensalada, elaboramos un aceite de c\u00edtricos y bergamota. Para ello, rallamos los c\u00edtricos, a\u00f1adimos el aceite de oliva virgen y lo confitamos a 40\u00baC durante 1 hora. Luego lo dejamos enfriar y, cuando est\u00e9 listo, mezclamos el aceite de c\u00edtricos y bergamota con el vinagre de m\u00f3dena para obtener una <strong>vinagreta saludable y deliciosa. <\/strong><br \/>\n4.- Para presentar el carpaccio con la ensalada y la vinagreta, en primer lugar rallamos la macadamia hasta que cubra todo el plato. Despu\u00e9s ponemos la ensalada de frutos secos en el centro y, encima, unas cuantas lonchas de carpaccio cuando haya perdido el fr\u00edo.
