Se trata de una receta de <a href=\"https:\/\/shawellness.com\/shamagazine\/amaranto-el-alimento-de-los-dioses\/\" target=\"_blank\" rel=\"noopener noreferrer\">amaranto<\/a>, la fuente principal de prote\u00ednas de aztecas, mayas e incas, y hoy en d\u00eda uno de los <strong>alimentos m\u00e1s ricos y nutritivos<\/strong> de la cocina mexicana. \u00a1Disfruta de esta <strong>sencilla y deliciosa ensalada de amaranto<\/strong> con la que te quedar\u00e1s saciado a la vez que incluyes un superalimento a tu rutina culinaria!<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Ingredientes (para 6 personas)<\/strong><\/h4>\n<ul>\n<li>Amaranto &#8211; 2 \u00bd tazas<\/li>\n<li><strong>Aguacate<\/strong> \u2013 3 piezas cortadas en cuadraditos peque\u00f1os<\/li>\n<li>Zanahorias \u2013 2 piezas ralladas finamente<\/li>\n<li><strong>Cilantro<\/strong> \u2013 1 pu\u00f1adito de hojas picadas<\/li>\n<li>Lechuga \u2013 1 pieza<\/li>\n<li>Rabanitos \u2013 6 piezas en rebanadas finas<\/li>\n<li><strong>R\u00facula<\/strong> &#8211; \u00bd manojo<\/li>\n<li>Lim\u00f3n &#8211; \u00bd taza de zumo exprimido<\/li>\n<li>Aceite O.V.E. \u2013 6 cucharadas<\/li>\n<li>Mostaza tipo Dijon \u2013 1 cucharada<\/li>\n<li><strong>Miel de palma<\/strong> \u2013 1 cucharada<\/li>\n<li>Sal y pimienta \u2013 al gusto<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h4><strong>Preparaci\u00f3n<\/strong><\/h4>\n<ul>\n<li>Coloca el <strong>amaranto en un bol<\/strong> y lava bien con agua templada. Filtra cuidadosamente para evitar la p\u00e9rdida de granos.<\/li>\n<li>Vierte el amaranto en una olla grande. A\u00f1ade 2,5 litros de agua fr\u00eda, <strong>condimenta con sal y d\u00e9jalo hervir<\/strong> a fuego bajo durante 30 minutos o hasta que el grano est\u00e9 tierno.<\/li>\n<li>Filtra con un colador de malla fina y reserva.<\/li>\n<li>Mezcla en un bol el <strong>zumo de lim\u00f3n con la mostaza y la miel de palma<\/strong>.<\/li>\n<li>Salpimenta, agrega el aceite de oliva y bate hasta conseguir una mezcla homog\u00e9nea.<\/li>\n<li>Utiliza otro bol para colocar la<strong> zanahoria, el cilantro y los rabanitos<\/strong>. Mezcla y saz\u00f3nalo con el ali\u00f1o.
