Y no es de extra\u00f1ar porque, como nos comenta Mar\u00eda Romeralo, nutricionista de SHA, <em>\u201clas algas son las verduras del mar, aportan una gran cantidad de minerales y vitaminas y tienen multitud de beneficios para la salud. Estimulan el metabolismo, son altamente depurativas y muy alcalinizantes, ayudan a disolver las grasas y las mucosidades del organismo, aceleran la desintoxicaci\u00f3n de metales pesados, normalizan la presi\u00f3n sangu\u00ednea, fortalecen el sistema inmune, contribuyen al peso \u00f3ptimo, mejoran la digesti\u00f3n y aumentan los niveles de energ\u00eda\u201d.<\/em><\/p>\n<p>Adem\u00e1s de muy saludables, los seres vivos m\u00e1s antiguos del planeta son un recurso natural que se renueva anualmente en el mar, por lo que tambi\u00e9n son un alimento estable y sostenible. <em>\u201cEspa\u00f1a es un pa\u00eds con muchos kil\u00f3metros de costa y en Galicia tenemos una gran producci\u00f3n de algas locales<\/em>\u201d, a\u00f1ade Mar\u00eda.<\/p>\n<p>&nbsp;<\/p>\n<p>La gran variedad de especies comestibles existentes permite a\u00f1adir algas a casi todo tipo de recetas, desde sopas a estofados, pasando por platos de cereales, verduras y ensaladas. Y es precisamente esta enorme versatilidad la que llam\u00f3 la atenci\u00f3n de la alta cocina occidental, que empez\u00f3 a fijarse en su potencial nutricional y valor gastron\u00f3mico con el nori, el alga con la que normalmente se enrolla el sushi, y que Europa descubri\u00f3 con el boom de la comida asi\u00e1tica vivido en la segunda mitad de la d\u00e9cada de los 90. Eso s\u00ed, tampoco podemos alimentarnos \u00fanicamente de algas ya que, como afirma la doctora, <em>\u201clo recomendable es consumir una peque\u00f1a porci\u00f3n diaria\u201d.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Especies de algas y c\u00f3mo incluirlas en la dieta<\/strong><\/p>\n<p>Si es la primera vez que vas a cocinar con algas, Mar\u00eda avisa de que <em>\u201csiempre deben comprarse certificadas, ya sean frescas (de temporada) o secas, que se conservan fenomenal en un bote de cristal. Pero, como no todas son iguales ni tienen las mismas propiedades ni sabor, unas especies se adaptan mejor que otras a determinados platos.
