Y es que, a trav\u00e9s de lo que comemos, el organismo obtiene los nutrientes que necesita para poder desarrollar todas sus funciones correctamente. Pero estas necesidades no son siempre las mismas y van cambiando seg\u00fan la estaci\u00f3n del a\u00f1o, por lo que nuestra alimentaci\u00f3n tambi\u00e9n deber\u00eda hacerlo. Como nos comenta <\/span><span data-contrast=\"none\">Lixi Lineas, Head Chef de SHA, \u201csi para contrarrestar el calor veraniego apostamos por recetas fr\u00edas, eminentemente crudas, refrescantes y con mucha agua, como las ensaladas, ahora lo que nos apetece son platos calientes<\/span><span data-contrast=\"none\"> para combatir la bajada de las temperaturas<\/span><span data-contrast=\"none\">, como los guisos\u201d.<\/span><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-contrast=\"none\">Los <strong>productos de temporada, org\u00e1nicos y de producci\u00f3n local<\/strong> son los protagonistas absolutos de la carta oto\u00f1o-invierno de SHA. \u201cGracias al clima de Espa\u00f1a, tenemos la suerte de poder contar con los mismos ingredientes dos veces al a\u00f1o. En oto\u00f1o, los que m\u00e1s nos interesan son las ra\u00edces y los alimentos que crecen bajo tierra porque est\u00e1n repletos de minerales muy beneficiosos para la salud, como la chiriv\u00eda, el apio, la remolacha, el br\u00f3coli o el daikon, y cereales, como el trigo sarraceno, que ayudan a aguantar el fr\u00edo\u201d, a\u00f1ade el chef.<\/span><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-contrast=\"none\">Lixi nos explica la importancia de utilizar alimentos de temporada y de cercan\u00eda: \u201cPor un lado, <strong>mantienen intacto todo el sabor, la frescura y el valor nutritivo<\/strong>. Por otro, se reduce la contaminaci\u00f3n y el gasto energ\u00e9tico derivados del transporte de mercanc\u00edas y la conservaci\u00f3n en fr\u00edo. Adem\u00e1s, buscamos constantemente nuevos productos para incorporar a nuestros platos que se adapten al concepto y a los exigentes est\u00e1ndares de calidad de SHA. As\u00ed, y siempre primando la producci\u00f3n local y nacional, acab\u00e1bamos de empezar a trabajar con unas alcachofas ecol\u00f3gicas de Alicante, que son menos \u00e1cidas y tienen un sabor espectacular\u201d.<\/span><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-contrast=\"none\">La nueva carta, que estar\u00e1 vigente hasta principios de mayo, consta de 245 platos, casi 500 si incluimos los desayunos, y apuesta por una sofisticada sencillez de sabores limpios capaces de conquistar los paladares m\u00e1s exigentes. \u201c<strong>Menos es m\u00e1s.<\/strong> Hemos simplificado las recetas y eliminado de ellas algunos productos y elaboraciones para centrarnos m\u00e1s en el fondo del plato y potenciar as\u00ed tanto la presencia como el sabor del ingrediente principal. Un buen ejemplo de esto son los cal\u00e7ots con salsa SHA o la hamburguesa crujiente de tofu con juliana de verduras. <strong>Esta evoluci\u00f3n tambi\u00e9n se nota en los postres<\/strong>, creados por Andr\u00e9s Mor\u00e1n, Healthy Pastry Chef de SHA, que esta temporada se elaboran con frutas con una menor concentraci\u00f3n de az\u00facar y chocolates 100 % ecol\u00f3gicos y sin az\u00facar.
