Por eso, <\/span><b><span data-contrast=\"auto\">nuestro modelo de alimentaci\u00f3n no incluye ning\u00fan producto derivado de la industria c\u00e1rnica,<\/span><\/b> <span data-contrast=\"none\">una de las m\u00e1s contaminantes del planeta. <\/span><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><b><span data-contrast=\"none\">Nutrici\u00f3n sostenible<\/span><\/b><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-contrast=\"none\">El modelo de producci\u00f3n de la <\/span><b><span data-contrast=\"none\">industria c\u00e1rnica<\/span><\/b><span data-contrast=\"none\"> demanda una <\/span><b><span data-contrast=\"none\">cantidad ingente de recursos <\/span><\/b><span data-contrast=\"none\">y es muy<\/span><b><span data-contrast=\"none\"> contaminante<\/span><\/b><span data-contrast=\"none\">. Es decir, no es sostenible. <\/span><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-contrast=\"auto\">Seg\u00fan la Organizaci\u00f3n de las Naciones Unidas para la Alimentaci\u00f3n y la Agricultura (FAO), la alimentaci\u00f3n animal consume el 95 % de la producci\u00f3n mundial de soja y el 44 % de la de cereales, y, seg\u00fan el Departamento de Agricultura de Estados Unidos, la mitad de la pesca mundial se utiliza para elaborar piensos. <\/span><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-ccp-props=\"{}\"> <\/span><span data-contrast=\"auto\">M\u00e1s datos: la producci\u00f3n animal consume 25 veces m\u00e1s recursos energ\u00e9ticos y naturales que los necesarios para producir la misma cantidad de prote\u00edna vegetal; por cada 16 kilos de cereales y legumbres empleados en alimentar al ganado vacuno solo se obtiene un kilo de carne; <\/span><b><span data-contrast=\"auto\">10 hect\u00e1reas de legumbres podr\u00edan alimentar a 61 personas al d\u00eda, mientras que la misma superficie destinada al ganado, solo proporciona alimento a dos personas;<\/span><\/b><span data-contrast=\"auto\"> una hect\u00e1rea de soja produce cinco kilos de prote\u00edna vegetal que alimentar\u00edan a 70 personas en un d\u00eda, pero la misma cantidad de soja destinada al ganado proporciona medio kilo de carne, es decir, la raci\u00f3n diaria para tres o cuatro personas. En definitiva, la producci\u00f3n ganadera consume una cantidad de alimento equivalente a las necesidades cal\u00f3ricas de 8.700 millones de personas, un n\u00famero superior a la poblaci\u00f3n mundial actual. <\/span><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-ccp-props=\"{}\"> <\/span><span data-contrast=\"auto\">Por otra parte, el agua, un recurso imprescindible para la vida, es cada vez m\u00e1s escasa. <\/span><b><span data-contrast=\"auto\">Para obtener un kilo de carne<\/span><\/b><span data-contrast=\"auto\">, arroz o trigo se requieren, respectivamente, <\/span><b><span data-contrast=\"auto\">20.000<\/span><\/b><span data-contrast=\"auto\">, 454 y 227 <\/span><b><span data-contrast=\"auto\">litros de agua<\/span><\/b><span data-contrast=\"auto\">. Adem\u00e1s, la producci\u00f3n ganadera <\/span><b><span data-contrast=\"auto\">contamina el agua<\/span><\/b><span data-contrast=\"auto\"> diez veces m\u00e1s que los humanos y tres veces m\u00e1s que la industria. Cada segundo se producen 125 toneladas de residuos procedentes de la ganader\u00eda industrial y la industria c\u00e1rnica, contaminando los r\u00edos y produciendo gases t\u00f3xicos, como amon\u00edaco, metano y di\u00f3xido de carbono, que afectan a la capa de ozono y contribuyen al efecto invernadero. Cada a\u00f1o se talan 300.000 kil\u00f3metros cuadrados de bosque para crear tierras de pastoreo donde criar ganado, lo que acelera la desertizaci\u00f3n del planeta. Todos estos datos corroboran algo que ya sab\u00edamos: <\/span><b><span data-contrast=\"auto\">lo que comemos no solo tiene un impacto directo en nuestra salud, sino tambi\u00e9n en el medioambiente.<\/span><\/b><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><b><span data-contrast=\"auto\">Alimentaci\u00f3n saludable<\/span><\/b><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-ccp-props=\"{}\"> <\/span><span data-contrast=\"auto\">En 2015, la Organizaci\u00f3n Mundial de la Salud public\u00f3 un informe que relacionaba el <\/span><b><span data-contrast=\"auto\">consumo habitual de carne roja y carne procesada<\/span><\/b><span data-contrast=\"auto\"> con el aumento del <\/span><b><span data-contrast=\"auto\">riesgo <\/span><\/b><span data-contrast=\"auto\">de sufrir diferentes tipos de enfermedades cardiovasculares, como la hipertensi\u00f3n o el colesterol, y el c\u00e1ncer correctal. Si bien es cierto que dicho informe no desaconsejaba su consumo, s\u00ed recomendaba moderarlo a una o dos veces por semana. Mario L\u00f3pez, nutricionista de SHA, explica que \u201cel modelo de <\/span><b><span data-contrast=\"auto\">nutrici\u00f3n SHA<\/span><\/b> <b><span data-contrast=\"auto\">no incluye la carne<\/span><\/b><span data-contrast=\"auto\"> porque solo utilizamos alimentos que sabemos que no generan ning\u00fan impacto negativo en la salud y que permiten al organismo recuperarse, regenerarse y depurarse de manera natural. Por eso, <\/span><b><span data-contrast=\"none\">est\u00e1 basado<\/span><\/b><span data-contrast=\"none\"> en cereales integrales, legumbres, frutas y verduras de temporada, semillas, frutos secos y algas, es decir, <\/span><b><span data-contrast=\"none\">en aquellos alimentos <\/span><\/b><span data-contrast=\"none\">que proporcionan al organismo los nutrientes necesarios para que pueda funcionar correctamente, pero<\/span> <b><span data-contrast=\"auto\">sin ninguno de los problemas de salud asociados al consumo de carne<\/span><\/b><b><span data-contrast=\"none\">\u201d.<\/span><\/b><span data-ccp-props=\"{}\"> <\/span><\/p>\n<p><span data-ccp-props=\"{}\"> <\/span><span data-contrast=\"none\">Si est\u00e1s pensado en dejar de comer carne roja, debes sustituir sus nutrientes por otros de origen vegetal. Como nos cuenta Mario, \u201cla carne<\/span><span data-contrast=\"auto\"> es fuente de prote\u00ednas (representan casi el 20 % de su peso), grasas saturadas, vitaminas del complejo B y minerales, como el hierro, el zinc, el potasio o el f\u00f3sforo. <\/span><b><span data-contrast=\"auto\">Si has decidido suprimirla de tu dieta<\/span><\/b><span data-contrast=\"auto\">, debes <\/span><b><span data-contrast=\"auto\">aumentar el consumo de prote\u00ednas de origen vegetal<\/span><\/b><span data-contrast=\"auto\">, que encontrar\u00e1s en los frutos secos, los cereales integrales, las legumbres y sus derivados, como el tofu, el tempeh o el seit\u00e1n. Cada uno de estos grupos de alimentos contiene amino\u00e1cidos, pero no los suficientes para que el organismo forme su propia prote\u00edna, de ah\u00ed que sea necesario combinar, por lo menos, dos de ellos en el mismo d\u00eda. Las grasas las obtendr\u00e1s del aceite de oliva, el aguacate, los frutos secos, como las almendras y las avellanas, las semillas, como las de soja o ch\u00eda, y el pescado azul. Las verduras de hoja verde, como las acelgas o las espinacas, las algas, los cereales integrales, como el mijo, y los frutos secos, como las nueces, son una buena fuente de minerales.
