Couscous marzipan with pear compote and fruit and nut nougat

The SHA version of these two typical Christmas treats is as delicious as it is healthy

All the desserts made in SHA’s kitchens share two main characteristics: they deliver that sweet touch to round off any culinary experience and, most importantly, are packed with health-promoting properties. We’ve replaced the classic ingredients of traditional baking—sugars, processed flours, eggs and dairy products—with other much healthier options that are highly nutritional without renouncing flavour or the pleasure of enjoying a sweet treat at the end of the meal.

Of course, this natural approach to baking also includes typical Christmas treats. A good example is our couscous marzipan with pear compote and fruit and nut nougat, two recipes that we encourage you to prepare and enjoy at home. The ingredients include nuts with powerful antioxidant and anti-inflammatory benefits, such as almonds and hazelnuts, which are rich in healthy fats, vegetable proteins, fibre, vitamins B and E and minerals and trace elements, such as calcium, magnesium, potassium, phosphorus, iron, manganese and zinc. They strengthen bones and joints, help control cholesterol, prevent cardiovascular diseases, improve cognitive abilities, strengthen the immune system and contribute to proper cellular functioning. In addition, they are satiating and energising foods, perfect for maintaining optimal weight and combating the winter cold.

The recipes also include fruits, both fresh and dried, which provide the sweetness that every dessert needs. Pears are rich in potassium, vitamin C, fibre and antioxidant flavonoids such as quercetin, while dried apricots and sultanas are a source of provitamin A, essential minerals, polyphenols and fibre, improving intestinal transit, aiding digestion, regulating blood pressure and fighting free radicals. And because they contain hardly any water, their nutrients are ultra-concentrated.

In short, two energetic desserts to avoid falling into Christmas indulgences, while enjoying sweets that are not only delicious, but also very healthy.

Ingredients

Fruit and nut nougat

200gr ground almond

Dried peaches

1 tbsp raisins

25 gr hazelnuts

3 tbsp rice syrup

1 tbsp coconut oil

Half lemon zest

50gr chocolate glaze

50gr oat milk

 

Coussous marzipan with pear compote

100gr almond paste

50gr rice syrup

250gr oat drink

250gr of cooked rice couscous

1 pinch of salt

50gr pear compote

Preparation

Fruit and fruit nougat

1. Put all the ingredients in a bowl and mix them together with a spoon.
2. Place the mixture in a mould, ideally rectangular, flattening it well so that it is compact.
3. Put the chocolate and oat milk in a saucepan or bowl that can be heated and melt until the chocolate is thick.
4. Place the nougat somewhere where it can be soaked well on all sides and pour the chocolate on top, making sure it also runs down the sides.
5. Decorate to taste with nuts and other fruits. You can top it off with a sprinkling of coconut.

 

Coussous marzipan with pear compote

1. Mix the almond paste, rice syrup and oats.
2. Cook 250g of couscous with a pinch of salt. Once the couscous is cooked, add the previous preparation and mix until you get a consistent dough.
3. In your hand and with the help of a dessert spoon, take a portion and flatten it against the palm of your hand (more or less the same size as the palm) and put the pear compote.
4. Close the dough and make small balls that will be dipped in almonds.
