Healthy Chocolate Cake Recipe
This Healthy Chocolate Cake Recipe is really yummy and so easy to prepare that you can whip it up in no time at all! Perfect as a Christmas Dessert!
Ingredients
- 1 cup whole wheat pastry flour
- ¼ cup unbleached white flour
- 3/4 cup maple syrup
- 1/3 cup unsweetened cocoa powder
- 1 heaped tsp baking powder
- ½ tsp salt
- ½ cup warm water or sparkling water
- ¼ cup fresh orange juice
- 1 tsp orange rind
- 1 tsp vanilla extract
- 1/3 cup coconut oil warmed to liquid
Chocolate Glaze Ingredients
- 1/4 cup maple syrup
- 3 tbsp coconut oil
- 4 tbsp soy milk
- 2 tbsp orange juice
- 2 tbsp unsweetened cocoa powder
- 2 tbsp grain sweetened chocolate chips
- 1 tsp orange rind
- 2 tsp vanilla extract
Decoration Ingredients
- 2 tbsp walnuts, chopped and roasted
- Orange slices
Preparation
1. Pre-heat the oven to 350ºC.
2. Oil an 20 cm x 20 cm pan.
3. Place the flour, salt and cocoa powder into a bowl. Mix lightly.
4. In a separate bowl, place the maple syrup, oil, orange juice and rind, water and vanilla. Mix thoroughly with a fork.
5. Add to the dry ingredients and mix to a smooth batter.
6. Add the baking powder and mix well.
7. Pour into the cake tin. Bake for 25-30 minutes or until the cake comes away from the side of the tin.
8. Remove from oven and allow to cool for a few minutes.
9. Remove cake from pan and cool.
10. Meanwhile, place the glaze ingredients in a pan. Melt over a low heat. Mix well. Pour the glaze over the cake.
11. Decorate with orange slices and chopped walnuts.
