Millet with Sweet Vegetables with Shiitake Relish

Our Nutrition Expert, Melanie Waxman, has shared this delicious recipe of millet and shiitake to boost the immune system when the season changes. The Shiitake stimulates the production of defense cells and boosts the immune system because it contains immunoactive elements, something that is important to fight any type of disease.

Ingredients

Millet with Sweet Vegetables

  • 1 cup millet rinsed and soaked in a 3 cups water for 30 minutes
  • 2 cups pumpkin cut into small chunky pieces
  • 1 onion diced
  • A pinch of salt
  • Sesame or olive oil (optional)

Shiitake Relish

  • 2 cups shiitake rinsed and sliced
  • Shoyu
  • 1 cup spring water
  • 1 teaspoon kuzu diluted in a little water
  • Grated fresh ginger
Preparation

Millet with Sweet Vegetables

  • Add the sesame oil and onion to a pan and sauté for a few minutes.
  • Add the millet, soaking water, and salt.
  • Place the pumpkin on top of the millet, and cover with a lid.
  • Bring to a boil, and simmer for 20 minutes on a low flame.
  • Remove from the fire and save.

Shiitake Relish

  • Place the shiitake and water into a pan.
  • Bring to a boil and add a little shoyu.
  • Simmer on a medium flame for about 10 minutes.
  • Add the diluted kuzu and stir to thicken.
  • Add a little fresh ginger.
  • Mix gently and serve over millet.
