We present the SHA Wellness Dessert Recipes at Masterchef that the contestants had to prepare in the team event. Dare to implement them all and become a masterchef!

 

GINGER CREME CARAMEL, SOY YOGURT CREAM, APPLE GANNY SMITH AND GRANOLA OAT

 

Ginger cremeGinger creme

 

 

 

INGREDIENTS

Ginger Flan

  • Extra virgin olive oil – 20 ml.
  • Ginger – 50 gr.
  • Oat Drink – 250 ml.
  • Rice Drink – 250 ml.
  • Agave syrup – 50 gr.
  • Molasses Rice – 110 gr
  • Agar-agar – 4,5 gr.

Ginger is a powerful anti-inflammatory that improves circulation and increases the ability to digest food.

Yogurt Soup

  • Soy yogurt– 200 ml.
  • Soy cream – 50 ml.
  • Rice Molasses – 70 gr.

Lemon cream

  • Lemon juice – 50 ml.
  • Soy drink – 150 ml.
  • Molasses – 45 gr.
  • Agar-agar – 6 gr.
  • Soy cream – 30 ml.
  • Turmeric – 1 c/c

Others

  • Smith Apple – 1
  • Blackberries– 8

 

PREPARATION

Ginger flan

Mix rice milk, agave syrup, rice molasses, agar-agar and ginger juice and bring to boil. Put the result on moulds in the fridge and let it cool for 3 hours.

Yogurt Soup

Mix soy cream with rice molasses and heat in slow fire. Move it away from the fire and add yogurt. Keep it for later.

Lemon cream

Mix soy drink, Molasses and agar agar, bring to boil and add the rest of ingredients (not the soy cream) once away from the fire. Let it cool and mix in the blender adding the soy cream.

For the granola mix oatmeal, walnut and almond laminated with rice molasses, bake until crisp and crush it in the blender. Use the laminated apple for the presentation.

 

 

ALMONDS PARFAIT AND RED FRUITS WITH SABLE ALMONDS

 

INGREDIENTS

Almond cookie

  • Almond powder – 30gr.
  • Almond flour – 60gr.
  • Water – 5gr.
  • Bio margarine – 35gr.
  • Rice molasses – 25gr.
  • Salt – a little

Red Fruits Sauce

  • Raspberries – 50gr.
  • Blueberries – 50gr.
  • Redcurrant – 50gr.

Red fruits contain many phytonutrients and are a potent anti-inflammatory, antioxidant, anticancer and antibacterial.

Almond Cream

  • Almond paste – 100gr.
  • Oat milk – 40gr.
  • Agar agar – 1gr.

Almonds are an excellent tonic, alkaline, rich in calcium and protein.

Vanilla Cream

  • Oat milk – 65gr.
  • Rice Molasses – 60gr.
  • White almond paste – 15gr.
  • Agar Agar 3gr.
  • Vanilla – 1 stick
  • Soy cream – 50 gr.
  • Kuzu – 3 gr.

 

PREPARATION

  • Mix the almond flour, whole spelt flour, margarine, agave syrup and some water and let it stand.
  • Extend in sil-pac, cut into rectangles and bake it at 160 degrees.
  • For the almond cream boil the soy milk with agar agar and add the almond paste.
  • Make a pastry cream with vanilla and soy milk.
  • For the decoration use red fruits and toasted sablé almonds.
