Healthy nutrition is one of the main areas that make up the SHA Integrative Method, and it is the first step towards achieving and maintaining an optimal state of health and wellbeing over time. That is why each of our recipes is born from a dialogue between the nutritional consultants, who choose the ingredients for their health benefits, and the kitchen staff, who turn them into haute cuisine dishes capable of conquering even the most demanding palates.
At SHA we always go for the healthiest option. That is why our version of this classic dish, meatballs with tomato sauce, does not include meat or tomato. In this recipe, we replace it with seitan, a high-quality vegetable protein made from wheat gluten, which means that people with coeliac disease or gluten intolerance cannot consume it. Seitan is rich in essential amino acids and minerals, contains no cholesterol, saturated fats or sugars, and is easily digested. Because of its texture and taste, it is known as vegan meat.
On the other hand, tomato, although it has some beneficial health properties, can cause an excess of stomach acidity, is difficult to digest and, due to its high folic acid content, can be harmful to kidney function. That is why at SHA we replace it with a mock tomato sauce made with carrot (which cares for digestive, eye and cardiovascular health), beetroot (which helps control blood pressure, improves intestinal transit and strengthens the immune system), celery (which regulates blood sugar levels, reduces both stress and cholesterol, and accelerates the renewal of joints and connective tissue) and onion (which favours digestion and the elimination of toxins).

For the vegetarian meatballs
900 g seitan
400 g dried onion
60 g parsley
40 g garlic
90 g buckwheat flour
Spelt flour
Salt and pepper
Olive oil
For the mock tomato sauce
Carrots
Onion
Celery
Beetroot
Oregano
Umeboshi paste
Tamari soy sauce
For the garnish
Peas
Carrots
Unrefined sea salt
Extra virgin olive oil
Meatballs
Finely chop the dried onion and sauté it in olive oil. Once sautéed, add the chopped seitan, salt and pepper to taste, and sauté for a few more minutes. Add the parsley and buckwheat flour, stir, and remove from the heat. Shape the meatballs, dredge in spelt flour and fry in oil.
Mock tomato sauce
Sauté the carrots, onion, and celery cut into regular pieces, cover with water and simmer for 20 minutes over a low heat. Add the beetroot, umeboshi paste, oregano and tamari, and blend.
Garnish
Slice the carrots very thinly and sauté in olive oil with the peas.
Serving suggestion: serve a base of mock tomato sauce, place the seitan meatballs on top and garnish with the carrots and peas.
